Fish Cakes

Ingredients:

-500g White Fish
-1 egg
-handful baby spinach
-1 clove of garlic
-1/2 onion
– 1tbsp fish sauce
-1/2 lemon
– 1 tspn coriander
-1 tspn parsley
– 2 tbsp Coconut Flour
Coconut oil for cooking

 

Directions:

1-pre heat oven o 180degree and cut fish into cubes.
2-in a food processor add garlic, onion and herbs and blend until chopped finely.
3-add in fish, egg and fish sauce and process until the mixture is combined and sticking together.
4- using a teaspoon, scoop out mixture and roll into balls, then roll in coconut flour before then
flattening.
5-Add coconut oil to fry pan on a medium to high heat & In batches fry the fish cakes until golden
and brown.
6-once golden brown add the fish cakes move fishcakes to the oven and cook for an additional
10mins to cook through.
