Mini Egg Muffins



-1 egg + 4 eggwhites

– 120g tinned tuna or shredded Chicken

– 125g Lite Cottage Cheese

-1 cup cooked vegetables (Broccolli, capsicum, grated carrots, zucchini)

– ½ diced onion

– Salt and Pepper




-Heat oven to 150degree

– Add eggs to a bowl and mix well

– Add Tuna or Chicken and Cottage cheese to the egg mix and stir until mixed.

– Add the chopped onion and grated vegetables to the wet mix and stir evenly

-Spray muffin tins with olive oil or grease lightly with coconut oil

– Pour mix evenly into Muffin trays and bake In oven for 20mins

– Check after 20mins and if the need abit longer cook for another 5-10mins
