Beetroot and Walnut Salad (1)

Roast Beetroot and Pumpkin Salad


-2 raw beetroots
-1/4 full pumpkin
-1- 2 tbsn feta
-50g Walnuts
-Baby Spinach
-Salt & Pepper



1-preheat oven to 180 degrees.
2-peel and cut raw beetroot into cubes and add to oven and cook for 40-50mins
3-cut and de-skin pumpkin and add to oven with the beetroot and allow to cook for 30mins
4-once cooked take the roast vegetables out and allow to cool for 20inutes.
4- once roast vegetables are cool, add baby spinach to a large bowl and mixed through beetroot and
5-add walnuts and crumble feta ontop.

6-dress with fresh lemon and season with salt and pepper
