- 1 cup spinach
- 2 mushrooms
- 1 tomato
- 1 chopped spring onion
- -2 eggs or 3 eggwhites
- 1 tbsn Cottage Cheese
- ¼ avocado
- Additional 1 cup Spinach to serve
- Whisk eggs in bowl then add the vegetable & combine well.
- Grease pan with olive oil or coconut oil over medium heat.
- Add Omelette mixture to the pan and allow to cook for a few minutes before flipping.
- Top with Cottage Cheese and Sliced Avocado over a bed of Spinach
- Season with Salt and pepper
