-1/2 large Kumura
-1 garlic clove or crushed garlic
-salt and pepper
-1-2 tbsp Coconut Oil to cook in
– Top with Cottage Cheese (optional)
1-grate the zucchinis & Kumura into a bowl.
2-add chopped onion, garlic, eggs & remaining herbs into the mixture.
3-Heat Frying pan to medium heat and add coconut oil when upto heat.
4-add 2 heaped spoonfulls to form each fritter and cook for 3 minutes each side or until brown
4-serve with a dollop of cottage cheese and eat with a fresh green salad.
